Thaw properly Remove from packaging and thaw in the refrigerator for 12–24 hours. Never thaw at room temperature.

Rest before cooking Let the meat rest at room temperature for 30 minutes before cooking.

High heat, short time Sear on a very hot cast iron or pan. 2–3 minutes per side for medium-rare.

Internal temperature 55–60°C (130–140°F) for medium-rare. Use a meat thermometer for best results.

Rest after cooking Let the meat rest for 5 minutes before slicing. Season simply with sea salt only.
