Every Wagyu carcass we import from Japan arrives with official documentation issued by the Japan Meat Grading Association. These records establish three things: authenticity, traceability, and grade.

Every shipment arrives with a certificate issued by the Japan Meat Grading Association. Three details on it are the proofs:

UNIVERSAL WAGYU MARK

Confirms the animal was born, raised, and processed in Japan

JMGA GRADE

Official quality grade from Japan's sole grading authority

Individual Identification No.

Traces this cut back to a single animal in Japan's national registry

AUTHENTICITY MARK NO. 1

THE UNIVERSAL WAGYU MARK

Introduced in 2007, the Universal Wagyu Mark serves as a globally recognized symbol of authentic Japanese Wagyu. Products bearing the mark are verified through Japan’s official traceability system, confirming that the animal was born, raised, and processed in Japan under established industry standards.

Yield and quality assessments are combined into a single nationally standardized JMGA grade

AUTHENTICITY MARK NO. 2

THE JMGA GRADE

The Japan Meat Grading Association (JMGA) is the official authority responsible for grading beef in Japan.

Every carcass is assessed for yield grade (A–C) for usable meat ratio, and quality grade (1–5) for marbling, color, firmness, and fat quality.

J-GYU sources Wagyu across the A-grade range, selecting the appropriate grade for each culinary application and dining experience. Every carcass, regardless of grade, is officially graded and certified by the JMGA.

AUTHENTICITY MARK NO. 3

THE INDIVIDUAL IDENTIFICATION NO.

Every certified cut carries a unique number tied to Japan's national cattle registry — the same system used by inspectors and importers. Anyone can check it.
