Wagyu Authenticity
Learn how authentic Japanese Wagyu is verified and how J-GYU ensures every shipment meets these standards.
Every J-GYU shipment is backed by official documentation issued in Japan. These three identifiers work together to verify that every product is genuine, traceable, and officially graded:
Actual JMGA Beef Carcass Grading Certificate from a J-GYU shipment (2023)
AUTHENTICITY MARK NO. 1
Introduced in 2007, the Universal Wagyu Mark serves as a globally recognized symbol of authentic Japanese Wagyu. Products displaying the Universal Wagyu Mark have been verified through Japan’s official traceability system, confirming the animal was born, raised, and processed in Japan.
Authenticity Mark No. 2
The Japan Meat Grading Association (JMGA) is the official authority responsible for grading beef in Japan.
Every carcass is assessed for yield grade (A–C) for usable meat ratio, and quality grade (1–5) for marbling, color, firmness, and fat quality.
J-GYU carefully sources Wagyu across the A-grade range, selecting the appropriate grade for each culinary application — from premium steaks to yakiniku and specialty cuts. Every carcass, regardless of grade, is officially graded and certified by the JMGA.
Yield and quality assessments are combined into a single nationally standardized JMGA grade
AUTHENTICITY MARK NO. 3
Every certified Japanese Wagyu carcass is assigned a unique identification number linked to Japan’s national cattle registry. This allows every animal’s history to be verified — from birthplace and breed to ownership records and processing.
Locate the 10-digit Individual Identification Number on the Beef Carcass Grading Certificate.
Enter the number into Japan’s official cattle traceability database, after the Agreement Confirmation Page.

Wholesale orders include this documentation as standard. Individual customers may request the same documentation by request.
